There's two main advantages to two handing (not the same as dual wielding) your effective strength goes up by 50% which means more damage and you can use weapons you don't meet the strength requirement for earlier. Eg. You have 10 strength but you can still two hand 15 strength weapon for full damage. The second advantage is you can use

So yeah, RoB in right hand Uchi in left. So, switch to 2-handing your Uchi by holding Y (triangle) and hitting your left bumper (L1). That will make you 2hand your Uchi. Then use Seppuku.
